- Ascorbic Acid: Commonly known as vitamin C, ascorbic acid is an essential food substance needed for the prevention of scurvy in humans. Acting as an antioxidant, this nutrient is important for the development and substance of healthy bones, blood vessels, ligaments, teeth, and gums.
Ascorbic acid is also needed in the formation of collagen in the body. This is the primary building protein of the body that is needed by all the body organs. A diet rich in ascorbic acid must consist of such fruits and vegetables as citrus fruits, tomatoes, broccoli, green peppers, spinach, potatoes and cabbage. - Fruits: These should be an essential part of your diet if you want to stop yourself from getting scurvy.
